There are some really great books out there if you are looking at getting into graphic arts or webdesign. I don't have the space to list all of the great ones I have used, but here's a few I am currently working through.
Illustrator Wow!
Illustrator Wow CS3 is the textbook recommended to me by Illustrator instructor. Honestly, I haven't had a chance to thumb through it yet as I am still waiting for my copy at the library. It's supposed to be great though (although not the best for beginners) and comes with a CD of all of the images used in the book.
Adobe Illustrator CS3 How-Tos: 100 Essential Techniques
The Essential Techniques series of books (they also have Photoshop and Flash amongst others) is a very good place to start for beginners. These books are clear and concise and will teach you all the basics you need to get started with whichever Adobe product you choose to learn.
The Book of Inkscape
The Book of Inkscape is due out in May and will definitely be worth checking out for anyone interested in Open Source Software. GNU's photomanipulation software, GIMP, and their animation software, Blender, already have countless books to learn from. As far as I know this will be the first for Inkscape.
